Title: Crunchy Spinach Salad
Categories: Diabetic Salad Vegetable Dressing
Yield: 6 Servings

SPIANCH SALAD
1/2lbSpinach, fresh; torn into bite size pieces
2tbAlmonds, slivered; toasted
3/4cCabbage, purple; shredded
1/4cRaisins
DRESSING
1/4cSugar
3/4tsMustard, dry
3/4tsSalt
1/2tsCelery seeds
1 1/2tbOnion, minced
1/4cVinegar
1/2cOil, vegetable

Combine all ingredients except dressing in a large bowl. Toss and serve with dressing.

Dressing: Combine all ingredients in a jar. Cover tightly, and shake vigorously. Chill several hours. Shake dressing again before serving over salad. Yield: 1 cup.
